Shaping future hygienic design guidelines for a unique and complex sector

EHEDG is launching a new Working Group dedicated to ice cream and frozen dessert production, aiming to develop targeted hygienic design guidelines that address the specific challenges of this sector.

Ice cream manufacturing environments present distinct hygiene risks compared to other food processes. Temperature fluctuations, condensation, and the use of open production processes, inclusions such as nuts, chocolate, or fruit create complex conditions that require specialised design approaches. In addition, processes such as moulding, freezing, and filling often involve water use and thawing cycles, increasing the importance of effective water management and contamination control.

To ensure a comprehensive and practical guideline, EHEDG is calling for experts to contribute their knowledge and experience.

 

Who should join?

EHEDG is seeking experts with experience in ice cream and frozen dessert manufacturing, including:

  • Ice cream and frozen dessert manufacturers
  • Ice cream equipment manufacturers (processing, freezing, filling, inclusion, and packaging systems)
  • Hygienic design and process engineering specialists
  • Air handling, water management, and refrigeration experts
  • Cleaning and sanitation specialists
  • Microbiology and food safety experts with experience in frozen products
  • Components and ingredient systems (e.g. cones, coatings), where insight into downstream challenges can add value

Experts with direct, practical experience in this sector are particularly encouraged to contribute.
