GL 28 Safe and Hygienic Treatment, Storage and Distribution of Water in Food and Beverage Factories
Third Edition, December 2025 - This Guideline is meant to provide guidance on water management (sourcing, storage and distribution) in the food industry to ensure fit-for-purpose water quality. In that respect, risk assessments are necessary to determine water treatments, where the Guideline provides an overview of commonly used water treatments, including their advantages and disadvantages. Known water contaminants (biological, chemical, physical) are also stated in the document, including monitoring, thereby supporting risk assessments. Furthermore, it summarises appropriate practices for controlling Legionella spp. in water systems.
