This guideline is a supplement to Guideline 44: Hygienic design principles for food factories
Food factory building construction, fabrication and refurbishment, together with the installation and removal of equipment, constitute a potential food safety and quality cross-contamination risk to any food being concurrently manufactured. This guideline describes the hazards associated with building work, how they can be controlled and how the selected controls can be validated, monitored and verified. This is documented as a building works risk assessment.
