A food production facility can be built with compliant floors, drains, walls and roofing systems, yet still fail to deliver a truly hygienic environment. Why? Because hygienic performance is not determined by individual components alone, but by how they work together.

This presentation introduces the concept of the Hygienic Inner Envelope (HIE), the integrated building environment surrounding the food production process. It brings together flooring, drainage, walls and openings, external and internal roof systems, and the critical interfaces, joints and penetrations that connect them.

Using practical examples and common failure modes, the session will explore what can go wrong, the hygienic risks these failures create, what good design should achieve, and what designers, food producers and operators should look for throughout the lifecycle of a facility.

Particular attention will be given to areas where responsibilities and systems meet, as these interfaces can become hidden weak points for water accumulation, moisture ingress, poor cleanability, condensation and cross-contamination.

The key message is simple:

Hygienic design does not stop at the equipment. The Inner Building around the process is part of the process.
